Santa Barbara Citrus-Herb Roasted Turkey Recipe

Give your Thanksgiving a true taste of Santa Barbara with this bright and flavorful turkey recipe, inspired by the fresh produce and coastal wines of California.

Ingredients

  • 1 whole Butterball turkey (12–14 lbs), thawed
  • ½ cup olive oil
  • ½ cup white wine
  • 3 oranges, zested and juiced
  • 3 lemons, zested and juiced
  • 6 cloves garlic, minced
  • 2 tbsp fresh rosemary
  • Salt and pepper to taste
  • 1 lemon, sliced
  • 1 bunch fresh parsley
  • 2 cups vegetable or turkey stock

Chickpeas

  • 115-ounce can chickpeas
  • 1 tbsp extra virgin olive oil
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp salt

Instructions:

  1. Preheat & Prep: Preheat oven to 325°F (165°C). Remove giblets and pat turkey dry.
  2. Citrus-Herb Marinade: Mix olive oil, wine, juices, garlic and herbs.
  3. Stuff Turkey: Add orange & lemon slices, parsley and sage.
  4. Roasting: Roast turkey breast-side up on rack.
  5. Cover & Bake: Roast about 15 minutes per pound.
  6. Baste: Every 45 minutes baste with pan juices.
  7. Check Temperature: Internal temp 165°F.
  8. Rest & Carve: Rest turkey 20-30 minutes before carving.
